Japanese Mochi

 Making Japanese mochi at home requires glutinous rice flour (mochiko), sugar, and water. Here's a basic recipe:



Ingredients:

- 1 cup glutinous rice flour (mochiko)

- 1/4 cup sugar

- 3/4 cup water

- Potato starch or cornstarch (for dusting)


Instructions:

1. In a microwave-safe bowl, mix together the glutinous rice flour and sugar.

2. Gradually add water to the flour mixture while stirring continuously until smooth.

3. Cover the bowl with plastic wrap or a microwave-safe lid.

4. Microwave on high for 1 minute.

5. Remove from microwave and stir the mixture with a wet spatula or wooden spoon.

6. Cover again and microwave for another 1-2 minutes, until the mixture is cooked and becomes translucent.

7. Allow the mochi to cool slightly until it's safe to handle.


8. Dust a clean surface with potato starch or cornstarch to prevent sticking.

9. Transfer the mochi to the dusted surface and divide it into smaller portions.

10. Shape each portion into balls or squares using your hands or molds.

11. Enjoy your homemade Japanese mochi! You can fill them with sweet bean paste, fruit, or ice cream if desired.
